
I’ve been growing my own hops for four years to produce unique and truly Scottish beers with locally grown barley/wheat and therefore a low carbon footprint. Currently, we have several beer projects underway shown below

A refreshing golden beer with a heavy beat of tropical/citrus notes and a fast tempo of marmalade.

Saison Dundee is made with Scottish barley, wheat, and oats together with 7 home-grown Dundee DD2 hop varieties for a refreshing fruity and spicy tartness.

A citrus IPA style made using various hops and surplus bread from Clark’s Bakery (Dundee) to promote recycling and reduce wastage. Drink Beer Save Planet.

This unique DIPA is made with Scottish barley, wheat, and oats together with a purple Tibetan barley variety (‘Purple Karma’) and hops grown by The James Hutton Institute.

A series of nine labels representing the historic trades of Dundee is currently being designed as a project with local art students for release of different beer styles in 2021.

A rich Red Ale made with all the ingredients of the famous fruit cake of Dundee – Dei Donum (Gift of God).

A unique and genuine Scottish craft beer made with my hops grown in Dundee, Scottish Barley and Wheat, Scottish Water. All profits from this sale are donated to the ‘Optimistic Sound’ fundraising charity to bring the ‘Big Noise’ orchestra program to Dundee.

‘The Best Beer With Sliced Bread’
This is a range of Pale Ale style beers using surplus bread/rolls and various hop combinations in collaboration with Clark’s Bakery (Dundee) to promote recycling and new solutions to the UK’s most wasted household food product – bread. Tackling food waste is a massive and immediate opportunity to reduce our environmental impact and improve the social value of our food system so I thought it would be a great idea to start locally with one of Dundee’s institutions – Clark’s Bakery.
This will not only save money in waste disposal for the bakery and the brewery (reduced grain bill) but will also raise the profile and business acumen of all participating companies. The public embrace concepts with a social conscience and this would be further enhanced by donating a percentage of the profits from the sale of Liquid Bread to local charities. I’ve been experimenting in producing different recipes (malt and hop variations) and so far using surplus rolls up to 33% of the Grain bill produces a novel and quality beer.
